Garden Bed 1, May 21

The garden still looks great at the moment but with the weather change we only have a few weeks left for the crops that do well in early spring and/or late fall…heat will make the spinach and lettuce harden and bolt. The spinach I’m going to harvest most of today so that I can freeze it (just wash, cut, put in an airtight container). I’ll leave the plants alone so they can keep growing new leaves as long as possible. Once they bolt we’ll save the seeds to plant in the fall. We also have broccoli, brussel sprouts, cabbage that are doing well but not ready to harvest. These do take longer to mature so maybe they will tolerate the heat better? I guess we will find out. I don’t remember at the moment!
